A great recipe with loads of protein and lots of micronutrients for health/fibre and being full.

Winning.

 Beef Massaman – slow cooker – medium spice

Serves 4

This isn’t a traditional Thai version, but I wanted to add extra veggies and use what is readily available all year round – works so well!
800g diced beef

1 onion
1 leek
3 carrots
750g potato, diced (new or white – needs to be firm to not turn to mash!)
1 fresh red chilli (depending on how you like your heat)
3 cloves garlic, minced
1 thumb fresh ginger, minced
2 tbsp medium curry powder
4 tbsp soy sauce
2 tbsp fish sauce
1 can coconut milk
1 tbsp peanut butter or 1 heaped bsp.. ground almonds
1.5 tbsp brown sugar
Squeeze of lemon or lime juice
2 tsp cornflour

• Fry the onion in the garlic & ginger

• Fry the beef very quickly any only for a few moments until some of the meat has browned (not all the way around I have found is very for keeping it tender)

• Put everything into the slowcooker, leave for 6-7 hours on low & then serve!
